You should not have any difficulty setting up DHCP, you should NEVER have to
do it. Run the 'Change Server IP Address' item from the SBS console,
Internet and Email section. This changes the server's internal IP and makes
many other modifications for correct SBS operation. I don't care that it now
works, run the wizard to again change the subnet. When done, post back
saying explicitly 'I have run the "Change Server IP Address" wizard, as
advised' or I'm going to leave you to your own mechanics.

Then Run the CEICW (Connect to the Internet item, SBS console, To-Do List),
I hope it will fix any manual changes you have implemented to NAT. There is
no reason for you to be looking at NAT, or address pools, and the reason
your email isn't working is that you haven't run the CEICW (or tried it and
it failed because of your previously misconfigured network). Again, post
back 'I have run the CEICW' or you're on your own.

Sorry to be using the 2*4 on you but you are creating your own problems.

No component of SBS (that I can think of) other than the CEICW (and through
it DNS Server) need know anything about your ISP IP settings, you use a
private network (192.168.X.Y/24) on both your internal and external
interfaces, X should be different so that the two are seperate subnets (you
could, and some advise to, use another private range, say 10.whatever for
either). The CEICW will ask you to supply ISP DNS info, it will feed these
to DNS Server as 'forwarders'.

BTW: there's no reason to hide the private ranges in use, here's mine
