Restoring from tape to larger partitions should be fine. As you arent actually changing any driver dependent hardware there is no real issue. You dont really have to update the server too extensively when running the restore stage as this will overwrite everything, though I tend to put any major service pack on if available. But all your applications etc. will not need to be installed - these will all return upon the restore.
On the Exchange side you can move the databases really easily. You just right click the email store and in properties are the paths to the stores. If you brwose to a new location the database is moved for you. Note that this move may take a while with a large email database but this will be out of hours anyway.
So, backup as you say - twice is nice. Add in new disks and create array and 3x partitions. Reload Server to C: then Restore will repopulate C: and D: leaving E: blank. When you are happy the system is as before just re-specify the exchange database paths across to E:
I would recommend RAID 1 not 5 - issues I have seen, when they do happen, are much more problematic with RAID 5 and any speed benefit isnt realised. Id have two pairs of mirrors in your setup with a 5th disk as the page disk - but then you probaly dont want to think about that - a restore is enough to keep you going!

2. I plan to move all the data to an external hard drive, excluding Exchange, thus decreasing the size of the backup. That leaves System, Programs and Exchange.
3. Run 2 Full Backups of the SBS Server, 1 to tape and 1 to External Drive. 4. Install new drives - System 15 GB and the rest for Data and Exchange.
5. Install SBS2003 Standard, with Exchange on D drive ( The original location). Install all programs, patches etc. to bring the O\S to the pre backup baseline.
6. Restore from full backup.
7. Move Data stored on the External Hard Drive back to original locations.
7. Rejoin Workstations to the Domain.
Will this work?
Will the fact that the original system partition is compressed cause any problems that I am unaware of?
Did I miss something?
Is there a better way?
In a perfect world I would prefer to have 3 partitons - System, Exchange and Data. Any suggestions on whether I can accomplish this somehow? It is Exchange that scares me. My experience with moving Exchange data is limited at best.
Any and all help is great appreciated.
