Hi, I have it setup with two offices in a similar way to yourself but not with Symantec boxes; each box handles the VPN connection, in effect joining the two networks into one. There are no settings onthe server to play with.
A bidirectional VPN policy is setup in both firewalls using an IPSec VPN to automatically forward all data to the remote network based on its address.
Semantec should have a guide as how to set this up on their web site.
