Is it possible to change sbs2003 cd key?

I installed a test server, that due to the circumstances became a production
server.
Now, I have a perfectly legal media+cd key, unfortunately, both were *not*
used during the test.

How do I go legal? Is it possible to somehow force the real key upon the
installation? I already tried "msoobe.exe /a" - it wont accept the legal cd
key.

Alternatively, if I have to reinstall and restore - what kind of backup and
restore will preserve all the data the current server has - users,
computers, mailboxes etc.?
