That's an informational message rather than something more serious, so
between that and the troubleshooting you've already done, plus the fact that
Exchange seems to be working normally, I'd start looking for another
possible cause.
Common causes of spontaneous reboots: it's usually hardware. You could
look at RAM and overheating first. Another possibility would be something
power-related. Is the server connected to an UPS? It can't be that the UPS
is doing a scheduled reboot, can it? Another possibility could be a driver
error, although I'd expect a blue screen or logged error with that.
If these reboots are completely spontaneous in that they happen at random
times and without any specific action you can point to as a cause, I'd start
looking at hardware, especially seeing if the manufacturer has any
diagnostic software you can run.
