How do you know it's store.exe that's causing the reboots? What errors are
you seeing in the logs? Other than when the server is rebooting, does
Exchange seem to be functioning normally?

Are you doing Exchange full backups every night? If the server is staying
up long enough to do a backup, I'd get a good one now in case the situation
deteriorates. Otherwise, at the least maybe you can shut down all the
exchange services and copy the mdbdata directory to a safe location.
