Yeah, basically I am just after added hard drive space with the new
space mirrored like the current drives are. I intend to move all of
the user-type data to the new drives and just leave the originals for
the OS and Exchange (for now).

I would love to start from scratch with the server as far as
partitioning, SBS setup, etc. Unfortunately, I have annoying people I
work with who will buzz over the intercom and say "the system is
down..." like in one of those Strongbad emails! So at this point, just
a new mirrored set of hard drives would work, I think.
