Hi Ryan,
Thank you for posting here.
This question appears to be more consulting in nature. I'd like to provide
you with the following info for your reference.
Info 1. Deploy Windows XP via sysprep.
I agree with you that you can first sysprep Windows XP and then use Norton
Ghost software to deploy the image. You can refer to the following KB:
Updated System Preparation tool for Windows XP Service Pack 2, Windows
Server 2003, and Windows XP Tablet PC Edition 2005
http://support.microsoft.com/default.aspx?scid=kb;en-us;838080

The Readme.txt file that is included with the Windows XP Service Pack 2
(SP2) Deployment Tools contains incorrect information

Info 2.
I recommend you to use Group Policy to deploy Office. Do not deploy Office
2003 included in the sysprep image. Please refer to the following KB:

Info 3. To deploy the settings for all users, please use Group Policy.
Please check the following GP entries:
User Configuration\Administrative Templates\Windows Components\Windows
Explorer.
User Configuration\Administrative Templates\Strat Menu and Taskbar.
User Configuration\Administrative Templates\Desktop.
