Deploying Office 2003 on Windows XP with customer settings

I am in the process of migrating al 12 users from SBS2000 to SBS2003. We
are all currently running Windows 2000, so in conjunction with the Manual
Upgrade to 2003 we will be updating all desktops and laptops to Windows XP.
I have bought Open Licenses from MS for both XP and Office 2003, so that I
can deploy from the SBS server. Here are my questions:
1. Should I used Ghost Multicast to image the desktops with the XP as the
desktops are about 80% the same?
2. Should I just include in that image Office 2003 or should I deploy
with SBS 2003
3. How do deploy all of the custom setting for both XP and Office 2003
without having to manually setup each desktop?
- Things like the way windows explorer displays
- The start menu reverting to the classic windows style
- Office and XP not using personalized menus
- Settings in IE.
I would like to have these setup so that when new computers come in it's a
30 minute process, not a 3 hour. If you could at least point me in the
right direction I would be grateful.
