Glad to hear from you.
According to your description, I understand that you want upgrade the
mirror disk with new one. If I am off base, please let me know.
I understand that you may want to perform a disk replication. However,
this is the unsupported way. You may try the following steps:
Note: These steps are not supported by Microsoft. I provide them is just
for your reference and they are not fully tested. There are inherent
dangers in the use of any software found on the Internet, and Microsoft
cautions you to make sure that you completely understand the risk before
retrieving any software on the Internet.
1. Make sure you perform a full backup for both the system and
personal data, and then power off the machine.
2. Add the new hard disks into the SBS machine.
3. Power on the machine, enter into the utility of the RAID
controller, create the hardware array, and then format the array.
4. Do not boot into the SBS and then use the 3rd-party disk
replication tool, such as Symantec GHOST, to replication all data from the
old mirrored array to the new array. You may need to boot into command
prompt mode, such as using Win98 startup floppy disk. For more detailed
information, please consult the vendor of the 3rd-party disk replication
tool.
5. Boot the machine into SBS by using the old mirrored array.
6. Open Windows Explorer, you will see 2 hard disks with the same
content
7. Modify the BOOT.INI on the new array so that SBS can boot from the
new array. Please note that you need to change the ARC after change the old
disk with new one. After that, you can refer to the following KB articles:

8. Power off the machine.
9. Disconnect the old mirrored array, and then power on the machine.
