Hi Bryan,
For that users folder in the my documents redirection, you should add their
username and give them full control, then in the advanced section, make sure
to replace permissions on all sub folders. This will enable you to keep the
user as a Power User, but give them access to their my documents. It sounds
like their username was not added into the security permissions for their my
documents, and were only able to write via the domain\administrators group
that also has full control over the document sets.
