This is the approach we used when I worked at a company that did a GW to
Exch migration. We had 2000+ users, tho, and so had to do the migration
slowly. It didn't work really well for us, unfortunately, so I wouldn't
recommend it.
If you can do the cutover/migration at one time (i.e., over a weekend)
that's the best approach for you in all likelihood.
