Chances are that if SUS installs an update but the computer is not rebooted,
it'll still show as uninstalled until the reboot.

I have SUS check for updates daily at a very early time (I think 5 am). I
don't have it update the servers because I want to be there to watch the
servers reboot in case there's an issue. I also want to know exactly what
was installed in case the server does not come up after the installation
(IMO a very unlikely circumstance, but why risk it?).

If SUS is not updating your servers, it's probably because you don't have
the SUS GPO linked to the active directory organizational unit that contains
the servers. If you want the servers to update, link the GPO to the OU that
contains the servers. However, you should then figure out a way to make
sure that you know if a server is offline after a patch install, so that
you're not the bad guy on Monday morning when no one can log in :- )
