You want all mail for the other (old) domain to be forwarded to 1 account in
the new domain? or you want to "merge" them with the other (i.e.
johndoe@olddomain.com is sent to johndoe@newdomain.com)?
If you want to "merge" them... simply modify the MX records of olddomain.com
to the SBS box and then change add the domain in Exchange. Check this out on
how to do the Exchange part:

I don't recommend the other way mostly because you will potentially recieve
tons of spam and its much more complicated (in fact, I'm not sure I know how
to do that in Exchange because you would have to create a catchall account
just to a single domain). In any event, using a service like ZoneEdit for
the OldDomain.com you could enable MailForward (which is free last time I
check) so it forwards everything to the specified inbox.
