That is highly unusual...a very high ratio of IT staff to users. I'd have
thought one or two could handle this fine. What sorts of issues do they deal
with?

Glad to hear it - I've been fine with Dells, but I also love HP/Compaq
(HPaq?).

I don't use the fax, but I have extremely reliable servers - running SBS or
no. What kinds of problems do you have?

I'm not sure what you're asking or what your needs are, or what sorts of
problems you're having, or why you need 6 IT staff to manage a small
network. If you have really good server hardware, a solid network
infrastructure (including good cabling, good switches), a rock-solid
installation of the products, and do good daily admin & patching when
needed, I don't see the problem.
