You can certainly setup your SBS as a test server, but don't expect it to function in your domain without changing the config on your existing DC
If you like the way it works you can certainly migrate it to new hardware then
If you set up the SBS server separately to test without affecting your existing domain, then when you are ready to introduce the new server, you would have to re-do it all over again and in very specific steps

I am currently running a single Win2003 Server. I eventually plan to have a second SBS 2003 Server in the same domain. I understand that SBS will need to be the PDC in the domain.
