There's not much to it.

* You have to have SBS2000 SP1 installed.
* You want ISA2000 on SP1 + a specific hotfix, not SP2. The QFE is
documented in the SBS2003 docs.
* You have to disable or uninstall 3rd-party apps, especially Backup
and AV.
* Make sure all devices have Windows Server 2003 drivers available
(both server h/w and things like printers)
* Make sure your 3rd-party apps support Windows Server 2003.

As long as you meet all that lot, your upgrade is going to proceed
fairly reasonably.

Note that the SBS2003 setup tends not to upgrade everything on the
first pass (I think it's partly because of chicken & egg issues between
Windows and Exchange), and you may need to run it a couple of times to
get all components of SBS up to SBS2003.
