How to hide directories?

Hello Everyone!
I have just started an SBS server. There is two tings I don't like...
1: When a user browse the network to find a directory on the server they see a lot of maps on the server that they don't need to see. How can I hide them?
2: I moved the folder where users home direktory are placed to an other drive. I have fixed so they works as they should but... all users are able to open and change everyones... How can I change them so they are as they where from the beginning = you can only work with your own direktory.
