If you're lucky, IIS already created a backup config for
you... In the ISM, click on the Backup/Restore... and
select an earlier configuration to restore.

If that doesn't work,

Rename your existing IIS root, then re-run the SBS install
re-installing everything (except maybe network settings,
but IMO you might as well do that, too).
