I'm not sure if you are asking the right question here.

The answer to your question is that if you choose to demote the last DC in a
domain, you can do it, and the domain ceases to exist. Your data should
still reside on the server drives, but all the domain user accounts and
security ceases to exists. All your workstation users will not be able to
authenticate anymore to a domain, therefore the profiles that they have will
become inaccessible when you add the SBS in.

The question you probably should be asking is how to introduce the SBS as
your new DC in this domain so that you can do the other steps of demoting
the old DC.

You can install your SBS using the SBS media and stop at the point that it
finishes installing just the Windows portion of the server setup. (this is
after the final boot Windows setup does, before you get the splash screen to
install the SBS Server configuration. At that point, if you manually join
the existing domain, you can then install DNS.

>From there, run from W2003/SBS2003 CD1\i386 folder:

ADPREP /forestprep
ADPREP /domainprep

 and now run DCpromo on this (going to be) SBS box. Once you have the SBS as
the only DC, you can now transfer the server roles to the new Server

Once the new server has all the server roles, complete the SBS installation
as normal by running autoplay from the SBS CD and continuing.

Whenever you are ready, you can dcpromo (demote) the original server.

The method above preserves he domain accounts. I should add that the steps
above are incomplete for performing a similar process on an existing SBS
domain due to added complications related to the existing Exchange
Organization in AD.
