Hi Brad!
I think I'm going to ask MS on this subject sometime soon. You can leave
your settings at that for now... the only problem is that in the unlikely
event they change their mailserver IP address you would have to change it
again.
You might be wondering why I came up with this... to be honest I read it
sometime ago in a couple of thread that had problems with Bellsouth (pure
luck I guess). Our theory is that Exchange uses the MX record for delivering
mail even when you put a specific smarthost there. So, instead of checking
what is the IP of that hostname it looks for the MX record of the domain and
tries to deliver mail via that route. Since you used the IP address Exchange
is forced to send mail through that specific mailserver. Clear as mud? :-)
About the Connector vs. Virtual server question... both don't necesarily
need to contain the same information (although in most SBS cases it
should/could). The difference between the two is that VS have global
settings and the Connector is more specific... if I recall correctly
Connector settings override VS (you can guess what happened in your case
from that info). You can have more than one connector (for example if you
want to use DNS for some domains and Smarthost for others) and you can have
very different settings on each one.
BTW-> On the FQDN box you should put something like mail.yourdomain.com
(although, this doesn't do much).
