Alex,

You will want a backup SMTP server. Perhaps your ISP will agree to do this.
Otherwise there are providers out there that provide that service. I use
Zoneedit but I cannot vouch for their service. No-ip provides the service
too. There are others.

I had the same problem before I instituted the backup. Now everything seems
to work fine. While re-reading your question though, it seems that you have
a problem all the time. I just had intermittent problems. There is a delay
between adding the MX records and the time it replicates out into the public
realm. Make sure your virtual SMTP server is configured correctly.
