VMWare Workstation is not designed to fulfill the scenario you describe.
Yes, it is possible to run a full SBS, maybe even in a production
environment, as a virtual machine. I can even sortta see how this might be
implemented,,, I'd probably see it running on a 2nd DC W2K3 server.
I believe that VMWare ESX Server would be a more suitable host for SBS but
this would only start to make sense if you were looking at purchasing a high
end server to support SBS and at least one other server (maybe a TS), or
more likely a couple of extra servers.
But then, I believe you are barking up the wrong tree to start with. Want
'bulletproof' recovery? When you buy your server you buy another one,
identical hardware, and put it back in the boxes (after a burn in test) then
put it in a bank vault. This would (almost) ensure disaster recovery.
But more realistically, how about the 'almost bulletproof' method. Regular
backups, possibly additional system images (ghost, v2i, true image, whatever
works), something people don't mention much (probably because it's not in
the 'To-Do List', which it should be) is doing an ASR backup.
