I wouldn't even go as far as installing the new drives, just the controller.
The OS should detect the new hardware, at least as an unknown device.
You'll install the new controller driver on the OS, then shutdown.
Now use your cloner to mirror the IDE drives to the SATA drives. Install
the SATA drives in the system and remove the 3WARE controller. Power on...
I'm thinking SBS should boot on the new SATA-RAID controller automatically
at this point.
