Does users can undelete files from their home folder, the RECYCLER
folder giving them the same functionnality as a local drive?

It's because you've got folder redirection enabled for your users' My
Documents data to their home directory.
I've stopped using home directories (I still use folder redirection) and
haven't had that show up since. If you have W2003 and volume shadow copy
enabled, that's the best way to go.
