DCHP VLans and Private network.

I am not completely new to DHCP, but it is not something I deal with every
day. I have a complicated issue, and am hoping someone can help;
This is the setup;

x.x.125.128/27----NIC1-----DHCP Server---NIC2----10.4.10.x/24
|
Scope's x.x.125.1/25
Scope's x.x.125.128/27
Scope's x.x.125.160/27
Scope's 10.4.10.1/24

How do I tell the server to hand out addresses in x.x.125.1/27 and
x.x.125.160/27. Will I need relay agents for this?
Also, in the past I have had the DHCP server hand out addresses on the wrong
interface (giving a 10.4.10.x addresses on the x.x125.18/27 NIC1 interface)
Why, and is there a configuration setting I am missing to force the correct
NIC to be used?

Thanks in advance :)
