Brian,
Unfortunately, your options are all pretty undesirable. It is not possible
to migrate a domain controller, so I have listed a couple of your options
below. You also need to consider that your Exchange organization needs to be
moved.
1. Use Upromote to demote the domain controllers, then add them to your new
domain. This option is not supported by Microsoft, so do some research if
you plan to try this. Remeber to repermission Exchange at the org, site, and
container levels for the new service account that will be used.

Then change the Exchange service account to the new account (do a lot of
research on switching the Exchange service account first)
2. Install a new Exchange server in the new domain, and join it to the
existing organization. Move all of your mailboxes and all other Exchange
objects to the new server. Then you can decommission the old server.

For the file server, you may want to consider using a backup to restore the
files to a server with the same name in the new domain.
