Thanks for posting!

Based on my research, the rename is supported for Windows alone but the
Exchange will not work after that:

822590 Exchange System Attendant Does Not Start After You Rename a Windows
http://support.microsoft.com/?id=822590

Under the cause section, you will find:
<Domain rename> operations are not supported when Exchange 2000 servers or
Exchange 2003 servers reside in a Windows Server 2003 forest.
