More Migration Questions

OK I have got a read about doing the migrations and I am doing a Interforest
Migration in the morning from a 2000 domain to a 2003 domain. My question is
once you have moved all your users and computers and such from the old
domain and you are sure the clients are working properly on the new domain.
Do you just demote and down your old server in the old domain then? We are
planning on re formatting that server and bring it up with a fresh OS and
making it a DC in the new domain? Thanks
