We have 7 workstations on our network. With god's graces I setup a few
users and all seem well. We need to setup a guest user for outside
accountants to login and access the QB program. I know I can setup a
user without designating a computer.
1) However, if I don't designate a computer, how do I setup the
profile with QB software, specific permissions, etc.?

2) Assuming I do add the user to an existing computer (2 users same
workstation), then what happens if the accountant tries to connect
while a user is on that computer?
What do you mean with add a user to a specific computer? All domain accounts can logon to all domain machines by default, or did you specify on the user account properties a computer to the user account?
3) In the end, how do I assure the accountant(s) can connect without
disturbing anyone else?
If one user is logged on no other can logon to a computer, except he kicks the other one out.
