Hello Chris,
I am thinking this might be attributed more to your network than on the servers. You might be having intermittent network failures. You can try to troubleshoot this when it happens again, look if you find this error

This is happening roughly once a day. Running Win2k8 Server (standard) on a Dell 2970. I have ~8 users (computers are NOT joined to the domain) who map to a shared folder on the server.
Everything seems to run fine the majority of time, but roughly once a day they loose access to those shared folders. By that I mean if they try to open a windows explorer window, or open a file on the shared folder, it just hangs until it eventually times out.
Rebooting the server fixes the problem (until the next day when it happens again).
* this happens at different times of the day - ie. there isn't a scheduled job on the server that is doing this.
* I had this exact same setup on an older Win2k3 server that never had this problem. But I got a new server, with the newer OS and now I have this problem.
* There are occasional items in the Event Viewer, but nothing that looks related to this (listed below).
