What policy do you try to edit? What account are you using? Do you
try to edit the policy on the DC or from a client machine?

Hello Meinhof,

I actually went to the Edit GPO window and did the following:
Computer Configuration, Windows Settings, Security Settings, Account
Policies, Password Policy.
But there, for the "The password must meet the complexity
requirements" row,
I cannot change the choice: the Activate and Deactivate options are
grayed
out (Activate is checked and I cannot remove it)

Hello Robert,

The Password policy you have to configure on the DOMAIN level not
on OU. That's the only place where it will have an effect for
domain machines. In 2008 with functional level 2008 you can use
fine grained password policies where you can specify different
settings on OU's. Earlier OS are not able to do this without 3rd
party tools.
