If you are only installing one OS and the computer is a workstation my recommendation is Vista x64. Using a Windows server OS as a workstation is really a waste of time. You will run into problems with some software that is hard coded not to run consumer versions on a server. AV and other security programs are the worst culprits bit there are others. Although you may read that Server 2008 is faster than Vista I haven't seen this in the real world. Since the early betas of both I have setup several computers to dual boot both. I can't see any speed difference in day to day use. I think a lot of the appeal of using a server OS as a workstation is really just a form of one-upmanship or snobbery.
My personal recommendation is to setup a multi boot with Vista (or XP if you must), Server 2008 with the Hyper-V role, and some flavour of Linux. I have both my laptop and desktop setup this way. For day to day use I much prefer Vista or Linux. The only time I boot to Server 2008 is to use Hyper-V for testing various other OS' and network simulations.
The biggest disadvantage is cost. Windows server is much more expensive than the desktop versions of Windows. I'll counter the MSDN/TechNet argument by asking you to read the terms of use for those. If this is your every day OS are you properly licensed with MSDN or TechNet?

I have new workstation with newest i7 CPU. I have 6GB RAM. The only way to use all RAM is to have 64 bit Windows. Please tell me are send some links which will help me decide what should I install. Shell I go for XP 64 (Vista 64 bit) or Windows Server 2003 64bit (2008 64 bit).
What software will not work on Server edition?
Before I was running Windows Server 2003 32bit and the only problem I had was the software to my Sony-Ericsson mobile phone, which is not working on the server OS
