Help (ASAP) with Share / Security Permission

I need assistance with Share and Security permissions. Is sharing folder a
two step process?
I shared a folder (ex. DOC) - I have 4 sub-folders under DOC. Some users
need permissions for two of sub-folders and some for all 4 sub-folders.
What are my steps?
1. Shared the main folder DOC -- what permissions are given - Full Control,
Change and Read or just give them Read?
2. Share the main folder of DOC - and give everyone the Read permission
of
DOC and go to each sub-folder and use the Security to set the sub-folders'
permissions.
Please HELP.
