the offline sync i am speaking is a property of the share on the server.
Should be disable on the roaming profile share, and on redirected folder share like application data (if you are using redirected folders)

I am not using Offline files on the Profile. I have that turned off. My Roaming profile is not setup as redirected folder using a Group Policy. I go to the Profile tab in the Users Properties in AD Users and Computers and set the path to \\server_name\Profiles\%username%.

Roaming profile is synced with the local copy on log on and log off by windows based on the modification date. It's not using the offline folder for this part.
You shouldn't have it on redirected folder (application data) if used, because it break the goal with redirected folder (not having a sync copy).

My third share is \\server_name\MyDocs for my redirected My Documents. The offline settings for this share are also set to, "Only the files and programs that users specify will be available offline." I see that there is another offline option that states, "All files and programs that users open from the share will be automatically available offline" it also has a check box saying, "Optimized for performance". Should I be using that setting instead for all 3 of my shares?
I think I have read somewhere that this could be a DNS issue also, but I don't really think that is the case.
