or local machine administrator) but cannot be controlled from a
session open on any other machine connected to the network even if
the folder apperas in the explorer on this machine (right clic on
this folder then Properties only displays the "General" & "Security"
options)

AFAIK, that's normal. You can use RDP to connect to your server console to
do your admin - unless you're talking about shares on workstations, but
that's really not good to use anyway (all data should be on your server &
shared from there). You shouldn't need to modify/work on your sharing all
that much after you've set up your server.
