Does anyone know about where I can find some good resources as for
planning and designing a new file server for my company?

What specifically do you mean by "design" here?

Are you looking for capacity planning?

How many clients do you have? What sort of files will they store
one the server? How many bytes? (both total and typically for
each file.)

Will they be mostly viewing the files or frequently changing them?

Will the clients be sharing the files must or largely doing single user
access of each file?

I've tried to search in the technet but I haven't found those best
practise-list I'm looking for.
