File copy operations and server performance problems?

I have seen this problem on may hardware combinations:

When I copy large (> 5GB) Virtual Machine images from one disk to another on a Windows Server 2003 machine (x64 with 4GB RAM), the machine will get into serious performance problems. Remote desktop hangs and / or gets extremely sluggish. Virtual machines running is not responding etc. Ping responds ok during the copy. In performance monitor, I can see that Pages / sec is going over the roof.

This is a very serious problem.

Anyone else seen this or know how to fix this?
