Looking more and more like a drive problem. I am very reluctant to work with
the drives in case I end up destroying their data ...
Its a hardware config so I will check out what I can with the Adaptec
utilities.

I think you have found the problem - the controller and or drives -
probably drive.
Does the controller not have it's own utility to check drives? In any
case, if a drive has bad blocks it should be replaced immediately.

Ran memtest which was clean after 2 hours.
Booted into Safe mode, some hardware errors on the scsi controller
immediately prior to the hang. I am wondering if its a problem with the
controller - PM2654U2 , although there are a couple of bad block errors on
drive 0. The machine didnt hang in safe mode but there again there is
practically no disk activity.
chkdsk /r didnt show up anything unusual

Definitely try safe mode as suggested. If it works then you could at
least have a look at the event logs. Have a look at the RAID
controller docs and see if it creates its own log files that you could
have a look at.
I'd also try recovery console/command prompt. A good admin would have
installed that already and it would show as an option when Windows
starts up. If not, then boot from CD and choose a manual repair - be
careful - you don't want to do a reinstall - not at this point. From
there try a chkdsk /R.
If that doesn't fix it, I'd try to replace the registry with a backup.
Now that would be a much stronger option if you knew it was being
backed up regularly (which is done automatically when a sytem state
backup is made), but even if not it is worth a try. It is not
difficult, just be careful. Rename the current system registry first
to system.old or something, so you can always retreat back to it later
if need be. Copy the registry files from the
%SystemRoot%\Repair\Regback folder to the %SystemRoot%\System32\Config
folder by using Recovery Console.
Memory test - sure why not? There are fee downloadable ones that you
copy to floppy or CD and are self-booting.
