why need a server version?

What are the differences between xp pro and a windows server version?
I thought you needed a server version for webservers, ftp servers, file and
printersharing for your company.
But any of these functions can be done by a windows xp pro pc.
Ok, you probably can't set up a domain with a xp pro but you only need one
domaincontroller. So if you have 1 server version, all the other servers
(web, ftp, file and printersharing) can be done via a xp pro licence it
seems.
Is this correct or am I missing something?
