In Windows Server 2003, is there a way I can make the computer automatically
lock the workstation after a given period of time of inactivity. Like for
example in the power options settings there is an option to go into standby
after a given period of time of inactivity (no inputs). Is it possible to
simply lock the computer instead?

No, use the screensaver that specifically does this.
