You need to migrate ALL FSMO (Flexible Single Master Operations) Roles to
your new domain controller. You also need to setup your second DC as a
Secondary DNS Server to your current DNS Server.
Ensure all replication has occured, double check that the FSMO roles:
RID Master
Schema Master
Domain Naming Master
Infrastructure Master
PDC Emulator
AND Global Catalog are all on the secondary server. Leave it at least a few
hours, or until you are entirely satisfied that the new DC is up to date,
then demote your original Domain controller by running DCPROMO on it -
ensuring you do not tick the box "This is the last domain controller in the
domain"
This will ensure that the Schema is tidied up and everything is replicated
once and for all. Then stop the DNS Server service on the primary server
(don't delete the zones yet) and on your new server, right click the zone and
set it to Primary for each zone. Ensure your DHCP is also migrated across by
recreating it all on your new DC, and that it replicates the new DC's IP
Address as the Primary DNS Server.
After this you should have a trouble free demotion of the original server.

Run Netdiag and dcdiag on the new DC as a final thought to make sure
everything is sweet.
