win2k3 server: route using gigabit lan vs. fast ethernet

I need a quick sanity check:
I've got two win2k3 servers each with 2 gigabit ports (Dell 2650s). We are
using just one of these ports on a fast ethernet network while all the other
ethernet ports are disabled.
I have a lot of data (100 GB) that needs to be transferred as quickly as
possible from one server to the other so I thought to simply enable the 2nd
gigabit port on each server, assign ip addressess to them, plug them into a
gigabit switch, and simply copy the files through the windows gui.
My question: How do I ascertain and force this file transfer to occur via
the gigabit path rather than the fast ethernet?!
