We changed the settings on the 'internal' adapter to point to the server as
the DNS. There is also an 'external' adapter that connects to a broadband
router, which has been disconnected during the upgrade in accordance with the
microsoft upgrade instructions.

However, it still seems to hang on 'applying computer settings'. We left the
server in this state overnight and this morning it was displaying the server
event dialog box indicating an unplanned shutdown. I entered details into
this and the server rebooted but still hung at the same point. We rebooted in
safe mode with network connections and checked all settings again. The reboot
in safe mode is fine and all network settings are pointing to the internal
DNS server address. We just cannot get it to start up in normal mode in
anything like an acceptable time!
