Profile path problem

I have problem with changing users' profile paths. If somebody can
help me, I would appreciate it a lot.

I installed Windows Server 2003 Enterprise edition.

As a first idea I did put roaming profiles in
\\SERVER\USERS\%USERNAME%.

USERS was folder in root of local (server) hard disk. Shared as USERS.
Also, I put My Documents to be subfolder of profile root and mapped it
to Z: - so it was: \\SERVER\USERS\%USERNAME%\My Documents. Also, all
other user related folders were as following:
Desktop: \\SERVER\USERS\%USERNAME%\Desktop
Application Data: \\SERVER\USERS\%USERNAME%\Application Data
and so on

I created some users and everything worked well.

Later on, due to security issues, I had to change profile path to
\\SERVER\U\USERS\%USERNAME%\, where U is folder on local server disk,
shared as U. USERS is subfolder of U. I unshared old USERS folder, so
there is no more share USERS.

I changed on all existing users their profile paths and changed Z: to
point on \\SERVER\U\USERS\%USERNAME%\My Documents

Everything works well, except on logoff and synchronization.

Some folder still point to old \\SERVER\USERS\%USERNAME%, like Desktop
and Application Data.

On logoff from workstation, synchronization says:
Syncronization complete
Errors occurred while Windows was synchronizing your data.
Offline Files (\\Server\users on Server (Server)): Unable to connect
to '\\Server\users.' The network name cannot be found.

Of course, because, there is no more share \\Server\users.

Strange thing is, that same happen to newly created accounts. They had
never been connected to \\SERVER\USERS, but they complain that they
can not sync Desktop with \\SERVER\USERS\%USERNAME%\Desktop.

What I tried to do to fix the problem.
- I found in workstation's registry references to \\Server\users and
changed them to \\Server\u\users. But on next logon everything goes
back
- I tried to find references on server, but in registry I could change
just
on the one user, the one who is actually logged on - and this is
Administrator. I cannot log on as regular user, because I do not
have
  enough privileges.
Anyway, if I change this registry entry for administrator, and log
on
workstation as Domain Administrator, everything goes back.
- I found on server in folder
  Windows\sysvol\domain\policies\{...}\USER\Documents & Settings\ file
fdeploy.ini in which there was lines referencing \\SERVER\USERS. I
changed
  them too, but no results.

Anybody had similar problem? Some hints?

Thanx in advance.
