Moving my doc's to a server

Hello,
I am trying to learn more about servers and PC's so this
is not an urgent question just one of curiosity. I want
to see if I can (without using roaming profiles)
relocate 'My Documents' from the C drive to a drive on
the server. Is this some sort of group setting or a
registry entry?
I am not looking for the exact answer but an article that
will lead me to the answer; it's the best way I have
found to learn. Any reading suggestions are very welcome.
