You won't learn about Active Directory on XP even if you got IIS 6.0 to
install on it...

It has nothing to do with CALs or legality. IIS 6.0 is built in to Windows
Server 2003, IIS 5.1 is built in to XP Pro, the core system files are
different between the versions, and each version of IIS respectively relies
on the different system files

You can "Save state" on the VM when you need to do processor-heavy tasks.
The machine won't be actively running, but if it's just for learning then
that shouldn't be a big deal. Also, when you save the state, you can
restore it VERY quickly

And? You can remote desktop to XP Pro (which you have) and to Server 2003
(even running in a VM)

How does that solve your wanting to learn Active Directory?

How will that help you learn Active Directory? How will buying a Mac solve
any of your problems? And in regards to money, Standard would have cost
$1,000 instead of the $3,000 that Enterprise costs. A Mac falls somewhere
in between those two.

So then a saved-state virtual machine really sounds like it would help.
You'd have plenty of space for the guest, plenty of RAM....
