I want to set up my 2003R2 server DC on a ".local" domain.

have to add a "mydomain.com" to this? If so, how to configure it?

You do need a zone for the public name this server will be know as on the
internet, for example, exchange.mydomain.com, in that zone create one new
host, leave the name field blank and give it the internal IP address of the
Exchange server.
This is so you can access the server by the same name internally as you do
from the internet. This is important if you have purchased a SSL certificate
named exchange.mydomain.com, to be clear, create the zone for the same name
as the certificate.
Then you can open port 443 and forward it to the Exchange server for
accessing Outlook Web Access or using Outlook with RPC over HTTPS. You can
get a certificate from GoDaddy for $20 which is really inexpensive.
