Host the RECORDS? No, not really.

If you mean place the Servers in two different network then YES it is
both possible and desirable.

The RECORDS however should be in your DNS zone for you domain
and that should ALSO be in two different places or, perhaps better, at
a very reliable place like your registrar (most DNS servers belong there
anyway for public DNS.)

Servers yes. Records go in the DNS servers.

Generally the less desirable (the one without the Pop, HTML, etc)
server should have a lower priority (HIGHER number) for the MX.

In many designs you will need to collect the email from the low
priority MX server to make it available in a single (POP or HTML)
place unless you merely use these as incoming collection hosts for
an internal email system (e.g., Exchange) which collects from both.

In the latter case you might just with the priority to be equal and use
this for load balancing at the same time. (Microsoft does this on their
own public facing Mail servers.)
