So if I have to do all this work anyway, what if I simply
disjoined/demoted all network computers from the domain then deleted
all user accounts on the computers---clear all data from the AD/DC
server and registry then start from scratch by creating the DNS
server first, then AD. Then I would join all computers on the network
to the domain on the newly formatted AD/DC machine. In other words as
if I were setting up an entirely new network. Would this work?

All files from all computers are stored on file server drives that are
backed up nightly. No computer contains files on their C:\ drives as
it is company policy. Everything locally is stored on external drives
and backed up nightly.

My thinking is that starting from scratch would provide a clean Win
2003 install, a clean Active Directory and DNS zone. No one works on
weekends so I could (theoretically) have this done by Monday morning.

I agree with Meinolf and others that you already have a new domain built up, so why do it again? Also, keep in mind, there is nothing in the registry on a DC that relates to member machines, user accounts, etc. Simply disjoing and rejoin, add your users into the domain, create new groups, create new OUs to reflect your company design, logon as the new users which creates a new profile on a workstation, then log off, then copy old profiles on workstations to their newly saved profiles. Then you'll want to go through shared files and readjust the security permissions to reflect your new users and group accounts you just created.
